Our breeding method follows the “Disciplinare Chiocciola Metodo Cherasco” (Cherasco Method Snail Disciplinary), edited in partnership with the University of Gastronomic Sciences.
This is a natural method that adapts itself to different microclimates and it’s well placed in every kind of geographical area.
Becoming a snail breeder according to the Cherasco Method is a path characterized by some essential steps to be taken with our assistance and advice.

Simone Sampò, President of ANE and Director of the International Institute of Heliciculture will introduce you to the world of Heliciculture 2.0, explaining the Cherasco Method Snail Disciplinary and the 6 points that distinguish it.
Donato Mangino,Vice President ANE will show you the services and the business chain of Heliciculture according to Cherasco Method.
Cristiano Scarrone, architect in charge of the Technical Office will explain the technique and how to build/manage a complete natural cycle system.
IS TO DETERMINE WHETHER THE PLOT OF LAND IS SUITABLE.
The service costs €. 35 + VAT per sample and it is very simple: just send or deliver to the headquarters of our Institute a sample of about 200 gr. taken at a depth of 20 cm (under the turf). We deliver the analysis and the relative report by e-mail within 5/7 working days.
Our technicians will then discuss the results by telephone, giving you the first specific information about your project.
AFTER SETTING THE SUITABILITY OF THE LAND, IT STARTS WITH THE DRAFTING OF THE PROJECT AND SCHEDULE OF WORKS.
The Project specifically defines the number of fences that your plot will be able to hold according to the size and characteristics of the land and as a consequence the number of Helitex Nets, the quantity of seeds and Helix Integra and the number of breeders that will be included.
The Calendar will be your personal reminder of the work to be finish according to the seasonal frequency.
THE BUSINESS PLAN IS THE IDEAL TOOL TO ESTABLISH THE RANGE OF COSTS IN TERMS OF PURCHASES AND INCOMES.
It is usually necessary when trying to participate in a call for bids, a PSR or applying for a loan from a bank or credit institution. Coldiretti, Cia and Confagricoltura are the trade associations that can recommend current calls. The Institute’s task is to provide you with the necessary documentation to participate in the assignment of a call for proposals.
ON-THE-JOB TECHNICAL TRAINING IS A TWO-DAY COURSE DEDICATED TO TECHNICAL TRAINING IN THE FIELD AND DETAILED STUDY OF REGULATORY, HEALTH AND MARKETING ASPECTS.
The first day is dedicated to the construction of a fence and all the phases dedicated to the placement of nets, convexity of the soil (baulatura), sowing, introduction of breeders, feeding.
The second day is dedicated to the techniques of purging and packaging of the product, labelling and delivery procedures. All the commercial and fiscal information, the relationship with the local health authority and the possibility of creating a gastronomic and cosmetic line in Private Label are then studied in depth.
The cost of On-the-Job training is €. 400 + VAT per farm with a maximum of 3 participants per farm.
